It has a high butterfat content of 4.84%, which is 25% higher than average milk, and protein content of 3.95%, which is 18% more than other breeds’ milk. Jersey milk contains 25 percent more calcium than the average.

Jersey’s contains the most nutritional value per unit of volume. If a person were to consume Holstein low-fat milk she would need to ingest 9.64 ounces of milk in order to gain the same amount of nutrition from consuming 8 ounces of Jersey’s. The difference between Jersey milk and other milk is that it contains more protein, calcium, and butterfat (a butterfat level of about 6,8%).

Higher milk solids: Skimmed milk still has the same taste as whole milk because it has a higher solids content, not fat content.

Vitamins: Jersey milk has been found to contain more Vitamin A and Vitamin B1 per litre than Holstein milk. In addition to that, it contains an extremely high amount of Vitamin B2 (riboflavin).

The Dissimilarity Between Desi Cow Milk and Regular Milk

There are two types of beta-casein protein available in regular cow milk. Regular cow milk is produced by breeds like Jersey and Holstein cows. On the other hand, A2 milk is derived from desi breeds like Rathi, Gir, Sahiwal, and others. Although milk contains two kinds of proteins, namely whey, and casein. In addition, casein protein is also divided into two main types, which are alpha and beta-casein. Milk contains 80% of the protein casein. Regular cows which produce regular milk are available in India as well as foreign countries. However, cows that produce a1 milk are also called hybrid cows. A1 milk has a protein called histidine.

Whenever A1 beta-casein reaches the intestine, digestive enzymes break it apart and release BCM-7. A1 beta-casein protein has the same function as A2 beta-casein protein but is digested differently.
